It’s hot hot hot outside!
Which I’m not complaining about but I’m not in the mood to be slaving over a hot oven so for dinner tonight I made Cous Cous with roasted veg and chicken.
This is not just any couscous this is giant couscous… Scrummy balls of yumminess that take on what ever flavour you cook them in! and added bonus they are free on green or extra easy.
I bought the Cous Cous from holland and barrats as i couldn’t find it in the super market.
So without futher ado here is the recipe…
Giant Cous Cous
Preheat the oven to 180.
Slice up the veg and pop on the baking tray. Spray the veg with cooking spray and sprinkle with salt and pepper.
Roast veg for 30 mins or until golden.
Cook couscous according to packet instructions replacing any water in the recipe with stock.
When Cous Cous is cooked mix in veg and serve with the chicken…
