So I’m 3 weeks in and half a stone lighter! 1 stone to go to get to target so my eyes are on the prize!
However tonight I was craving something stodgy so I decided to make a luxury risotto.
I am aware that you can make a risotto with less syns by not using any wine however I think it’s worth it!

150g Rissotto rice
Large glass of white wine
400mls good quality chicken stock
2 garlic cloves
Handful of frozen peas
Fry light/ cooking spray
Heat a large heavy pan on a low heat and spray pan with fry light.
Finely chop garlic and onion and add to pan.
Cook onions and garlic slowly until soft.
Add the rice and stir until rice becomes translucent.
Add the wine and continue to stir until all the wine has absorbed. Add a ladle full of stock.
Continue to stir the risotto and adding a ladle of stock and waiting for it to be absorbed.
When two thirds of the stock have been added stir in the peas
Continue to add the stock until its all been absorbed, the rice is cooked and the risotto is a silky texture. If you need more liquid use hot water.
Stir in prawns and leave to warm through.
Serve up with a squeeze of lemon and enjoy!
