This is another one of my rather naughty recipes… Yes you did read this right…it does contain cream… DOUBLE CREAM.
So yes it is a more synful recipe but I belive that you should have your syns (count them) and eat them… the cream makes this recipe taste everybit as yummy as a full fat version and allowed on slimming world.
However if you are far more angelic than me and dont mind sacrificing taste then swap it for quark or low fat cream or cream cheese from your HEX A!
This recipe was inspired by this one on Pioneer Womans cooking blog.
Serves 4 hungry people or 6 ladies at lunchtime!
- 1 red pepper
- 1/2 onion
- 4 tomatoes
- 3 chicken breasts
- 2 garlic cloves
- fettichini pasta
- Cajun Spice
- 400ml chicken stock
- 4 table spoons of double cream (3.5 syns a table spoon = 14 syns)
- 1 small glass white wine (3.5 syns)
- 17.5 syns for the whole recipe 4.3 syns between 4 people or 3 sys between 6.
Slice onions peppers garlic and tomatoes and place to one side.
Put a large pan on the hob with water in to boil for the pasta.
Coat chicken breasts in cajun spice and slice in to small peices
Put a frying pan on a medium to high heat and spray with cooking spray
Place the chicken in the pan and leave on each side for 1 minute. This will give the chicken a charred smokey flavour.
When the chicken is cooked through place to one side on a plate then place the garlic, onions and peppers in the frying pan.
Fry the vegetables on a high heat for one minute or until the onions have started to brown, then add the tomatoes.
Cook the veggies for another 2 minutes until cooked through.
Remove the veg from the pan and place with the chicken.
Pour wine in the frying pan and use to deglaze the pan. cook for 1 minute then add stock and cream. Put the pasta on to boil.
Reduce the sauce down stiring continuosly until it starts to thicken. Then add the chicken and veggies.
When the pasta is cooked then drain it off and mix in with the chicken and sauce.
