Since starting slimming world I have eaten a lot of tomato based pasta sauces so recently I have been experimenting with other flavors.
I saw this recipe on the Jame Oliver website and decided to make it slimming world friendly. I do love a good carbonara but often find that it is quite heavy and stodgy because of the cream. In Italy they never add cream to the recipe so here is my uber comforting traditional slimming world friendly carbonara recipe:
- 1 Courgette quartered length ways and finely sliced
- 1 tsp Thyme
- 3 Rashers Smokey Bacon
- 3 Egg Yolks
- Pasta of your choice
- 30 g Parmesan Cheese (HEX A) Grated.
Put the pasta in a large pan of boiling water and leave to cook according to the instructions
Remove the fat from the bacon and slice in to small pieces. Fry on a high heat, add the courgette and thyme.
Once the pasta has cooked drain and reserve some of the pasta water.
Remove the pans from the heat.
Combine the pasta, bacon and courgettes add the eggs and a grating of Parmesan cheese.
Stir to make a sauce. If it goes claggy then add some pasta water until you have a smooth silky sauce.
Eat Immediately… Yum Yum in my tum.
