Lunchbox frittata

So for me lunchtime is a challenge l. I have to take something into work that doesn’t require heating and is filling, tasty and quick to eat.
It has to be good enough to keep me away from the piles of chocolate that seem to be lurking everywhere!
So after my Spanish holiday I was inspired to make a frittata it seems to be the perfect answer to a syn free lunch box treat !

Here’s the recipe, how do you spice up your lunch time

8 large eggs
2 onions
8 small potatoes chopped and boiled
2 peppers
Fry light

Preheat the oven to 200

Slice the peppers and onions and fry in fry light and a sprinkling of paprika for 10 mins or until soft in a oven proof frying pan.

Add the potatoes and mix.

Crack the eggs into a bowl and wisk up.

Pour eggs into pan.

Put pan into oven and leave for 15 mins or until golden and cooked through.

Makes 8 slices. Serve with a lovely fresh salad and pretend your lying by a pool in sunny spain.
